Ingredients
2 medium baked sweet potatoes
8 tablespoons brown sugar
½ teaspoon cinnamon
½ teaspoon salt
½ cup raisins (optional); currants, craisins or dried cherries are good, too!
1 cup apples thinly sliced
3 tablespoons melted coconut oil
¾ cup slivered almonds
Directions
- Preheat oven to 375 F and spray a 2-quart casserole dish with coconut oil.
- Cut sweet potatoes crosswise into ½-inch slices. Combine brown sugar, cinnamon and salt in a small bowl.
- In the casserole dish, place a layer each of potatoes, apples and raisins. Sprinkle with sugar mixture. Toss slivered almonds in melted shortening, drain and top the casserole with nuts.
- Cover and bake at 375 F for 35 minutes. Remove the cover, and bake for 10 minutes, or until the top is browned.
