A Better Brunch: Sweet Potato Hash with Ham and Mushrooms

You worked hard all week and a break is finally in sight. But don’t let a single sitting of pancakes derail your discipline. This weekend, make yourself a better brunch.

SWEET POTATO AND MUSHROOM HASH WITH HAM AND MUSHROOMS Serves 4

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon garlic, minced
  • 1 small onion, diced
  • 1 pound sweet potatoes, peeled and coarsely grated
  • 8 ounces button mushrooms, thinly sliced
  • ¼ teaspoon salt
  • 1/8 teaspoon black pepper
  • ½ cup ham, finely diced
  • 1 teaspoon fresh thyme, chopped

Instructions:

Heat oil in a large nonstick skillet over medium-high heat. Add onion and garlic, and cook, stirring often, until lightly browned. Reduce heat to medium and add sweet potatoes, salt and pepper, and mushrooms, and cook until tender. Stir in ham and thyme, cooking until the ham is heated through. Top with a poached egg.

Per serving (about ¾ cup, plus 1 poached egg): 217 calories; 20 g carb; 14 g protein; 2 g fiber; 9 g fat
